My Top 10 Favorite AIP Recipes That Helped Me Get Healthy and Lose 40 Pounds!

In my last post “ What I’m Doing To Get Out Of Another Health Rut.” I shared with you how I have gotten on and off track health-wise. Making yummy AIP recipes was the backbone of my previous success. 

This is why it’s so important to prepare, have a plan, and meal prep, meal prep, meal prep! 

Monday through Friday I meal prep breakfast, lunch, and dinner. 

Although, let me confess I’m having a bit of a hard time being 100% AIP compliant. 

Once you taste that gluten and sugar, it’s like a drug! 

Ammiright!? 

I’m allowing myself to enjoy eating out with friends and family on weekends and this is usually when I’m presented with the gluten temptation. 

Let me just say that eating it here and there is not going too well for me. 

Nevertheless, I’m going to keep treading forward, even if progress takes me longer. 

AIP Recipes

If you’re anything like me meal planning sounds like a nightmare. 

I can’t tell you how many hours I spent in those early AIP recipe-finding days scouring over the interwebs for meals that sounded appealing to me. 

I hope to save you many hours,  alas here are my top 10 favorite AIP recipes that helped me get healthy and lose 40 pounds!

 

  1. Vaca Frita-Grazed and Enthused

This recipe is great for making Chipotle-style bowls served over cauli-rice, or used to make tacos. Add half an avocado to either style and enjoy a filling meal. 

2. Thai Beef Lettuce Wraps – The Paleo Mom

These were on major repeat when I first started AIP. This recipe is savory and sour, super delicious and versatile. You can make lettuce wraps, tacos, or bowls. I especially loved pairing this recipe with a side of guac and tostones which compliments the savory and sour. 

3. Brazilian Style Chicken Wings- The Curious Coconut

I feel like this one was also my all-time favorite, I mean how can I even choose one? These wings are full of flavor and crunch. It makes a great meal when you’re craving something that feels a little indulgent. 

4. AIP Poptarts- LemonsnLyme

These AIP recipe for pop tarts taste better than the real deal if you ask me. The dough is made from white Japanese sweet potato and has a lovely fruity flavor reminiscent of fruity pebbles. These toast up nicely on the pan or toaster oven. But a word of caution, do not toast in a conventional toaster as they will get stuck.

5. Mongolian Beef- Unbound Wellness

One thing I missed when I was on strict AIP was ordering Chines food takeout. This AIP recipe hits all the notes of what I craved. It’s has a thick sauce and refreshing gingery notes. You can pair this with cauli-rice if you’re strict AIP or steamed rice (reintro).

6. Olive Oil Apple Cake– Gutsy By Nature

Even your non-AIP friends will love this cake. It is dense and moist (yep I said the M-word LOL).  It’s definitely a treat meal type of dessert.

7. AIP Blueberry Crumble– Autoimmune Wellness

This dessert is warm and comforting. I love making a variation of this recipe and using cherries or apples. 

I made this crumble recipe and swapped the berries for apples.

8. Berry Citrus Gelatin Gummies- Adventures in Whole Eating

Easy peasy to make, the hardest part is waiting patiently for the gummies to set. This fruity snack is refreshing in the summer and full of good for your skin collagen.

9. Paleo Chocolate Chip Cookies- Unbound Wellness

When I make these, I can eat the whole batch in one sitting, although that is not recommended 🙂 These are a crowd-pleaser, another one of those recipes that my friends request I make for get-togethers. 

Note: chocolate chips are an AIP reintro. 

I did bake these although they’re just as yummy raw 🙂

10. Instant Pot Maple Bacon Pulled Pork -Grazed and Enthused

Another great base for cauli-rice bowls or tacos. This dish is both savory and has a tinge of sweetness.

Conclusion

These are my absolute favorite AIP recipes to date. When I was on the elimination portion of AIP and made these recipes on repeat, I rarely felt deprived ( I mean let’s keep it real, who doesn’t miss eating whatever they want sometimes).
